About the Recipe

Great tang and wonderful consistency for a brush on sauce. It's a thick sauce that can be thinned by adding apple juice, water, apple cider vinegar or a combination of the 3.

Ingredients

8 C Rhubarb

3 ½ C Brown Sugar, lightly packed

1 ½ C Raisins, chopped

½ C Onion, chopped

½ C White Vinegar

1 Tsp Ground Allspice

1 Tsp Ground Cinnamon

1 Tsp Ground Ginger


Tools Needed:

Knives

Funnel

Spatula

Ladle

Jar Lifter

Lid Lifter

Headspace tool

Chopstick

Preparation

  1. Combine all ingredients into a large, stainless steel saucepan. Bring to a boil over high heat, stirring frequently. Reduce heat and boil gently, until mixture is thickened to the consistency of a thin commercial barbecue sauce, about 30 minutes.

  2. Fill Jar – ½ Inch Headspace

  3. Process Pints for:

    • 15 minutes at 0 – 1,000 feet

    • 20 minutes at 1,001 – 3,000 feet

    • 25 minutes at 3,001 – 6,000 feet

    • 30 minutes at 6,001 + feet
